I would suggest gluing the chines in the opposite direction of that in the video: start at the bow and work toward the stern. This would allow getting the joint at the bow fitted more accurately, as there would be no tension on the chine. Also, the way the notches are cut in the formers, the chine will line up with the bottom, rather than the sides. This makes gluing the bottoms easier, but makes gluing the sides more difficult later, especially at the bow.
